Food Philosophy
There are two types of dining experiences that I enjoy the most.  

The first is eating simple, solid comfort food. There's something about a steaming bowl of noodles, freshly baked mac and cheese or a heaping helping of mashed potatoes that inevitably conjures up memories of eating and laughing with friends and family, and the unparalleled feeling of being very satisfyingly full.
 
The second is fine dining at a restaurant that offers tasting menus.  It always inspires me to see how my peers put together their tasting menus, and what kind of journey they take their guests on through their cuisine.
 
What I do at TBLS is combine these two experiences, by taking the honesty of great comfort food and refining it with haute-quality ingredients, preparation, and presentation so that my guests can enjoy their most familiar dishes in an exciting new way.  I approach each multi-course tasting menu as an opportunity to give my guests a true adventure for the palate.  The journey begins with something light and refreshing to start, followed by something with a little more body to it, and then on to bolder and heavier flavors.  Afterwards, we present a light dessert course that is tart, sweet, and refreshing, and the meal is completed with something rich and satisfying.
 
Food should always be about enjoyment, fulfillment, and sharing the unique happiness that a great meal can bring with friends and family.  I'm looking forward to seeing all of you and hopefully playing a part in making your next dining experience one filled with laughter, new flavors, and great food.
